 Purpose: To create a chicken wing dish using cider-beer for a friend's magazine, Delight Gluten Free.
Spicy Cider-Beer Glazed Chicken Wings
SERVES 4 PREP 25 MIN GRILL 20 MIN
 On the never ending quest for the perfect chicken wing, I put together a favorite flavor combinationof mine: spicy and sweet. In no particular order.
Ingredients:
Glaze:
1/2 bottle cider-beer
1/2 cup agave Nectar
1 tablespoon Sriracha (asian chili sauce)
1 teaspoon lime zest
Chicken:
12 all natural chicken wings
Serve with:
Celery
Carrots
Gorgonza sprinkles?

Procedure:
1. 2 hours before you wish to serve, brine the chicken wings by combining salt, sugar, and water into a medium sized mixing bowl. Stir with a fork vigorously until all the salt and sugar have dissolved. Add chicken wings, cover, place in the bottom of refridgerator.
2. 30 minutes before you wish to serve, turn your grill on to medium high. You should be able to hold you hand 4-5 inches over the grate for 3-4 seconds at this temperature.
3. While grill is heating up, combine cider-beer,  agave nectar, and Sriracha in a small sauce pan or non-stick pan. Heat on medium-low. Test your glaze. It should taste spicy, sweet, and with plenty of apple flavor. If it is too sugary, add more cider-beer or apple-cider vinegar. If it is too spicy, add more cider-beer and reduce. After 20 minutes or so, your glaze should have a syrupy texture. Take the glaze off of the stove and let it cool. After it cools, add the lime zest and stir.
4. Clean your grill with a grill brush and wipe clean with a paper towel with olive oil or canola oil on it. Place the chicken wings on the grill and cook for 10 minutes on each side. When the chicken is finished, its juices will be completely clear (they won't have any pink in them at al). If you have a temperature gauge, the chicken should register 165 degrees Fereinheight.
5. Take the chicken off the grill and brush with glaze thoroughly with a basting brush. Serve with carrots and celery.
